Asparagus & Bacon Frittata

Ingredients

  • (6) Large Eggs
  • (1/4 cup) Whole Milk or Cream
  • (1/2 cup) Crumbled Feta Cheese
  • (4 slices, chopped) Bacon
  • (1 cup, trimmed and cut into 1 inch pieces) Asparagus
  • (1/4 cup, diced) Onion
  • (to taste) Salt & Pepper
  • (1 tbsp) Bacon Fat or Neutral Oil

Directions

Preheat oven to 375°F.
  1. In a mixing bowl, whisk together the eggs, milk or cream, feta, salt, and pepper. Set aside.
  2. In an oven-safe skillet over medium heat, cook chopped bacon until crisp. Remove bacon with a slotted spoon and set aside, leaving a little fat in the pan.
  3. Sauté the onion (if using) and asparagus in the same skillet for 3–5 minutes, until slightly tender.
  4. Return the bacon to the skillet, spreading everything evenly, then pour the egg mixture over the top.
  5. Cook on the stovetop for 2–3 minutes, until the edges begin to set, then transfer the skillet to the oven.
  6. Bake for 10–12 minutes, or until the frittata is puffed and just set in the center.
  7. Let cool slightly before slicing and serving.
