Ingredients
- (6) Large Eggs
- (1/4 cup) Whole Milk or Cream
- (1/2 cup) Crumbled Feta Cheese
- (4 slices, chopped) Bacon
- (1 cup, trimmed and cut into 1 inch pieces) Asparagus
- (1/4 cup, diced) Onion
- (to taste) Salt & Pepper
- (1 tbsp) Bacon Fat or Neutral Oil
Directions
Preheat oven to 375°F.
- In a mixing bowl, whisk together the eggs, milk or cream, feta, salt, and pepper. Set aside.
- In an oven-safe skillet over medium heat, cook chopped bacon until crisp. Remove bacon with a slotted spoon and set aside, leaving a little fat in the pan.
- Sauté the onion (if using) and asparagus in the same skillet for 3–5 minutes, until slightly tender.
- Return the bacon to the skillet, spreading everything evenly, then pour the egg mixture over the top.
- Cook on the stovetop for 2–3 minutes, until the edges begin to set, then transfer the skillet to the oven.
- Bake for 10–12 minutes, or until the frittata is puffed and just set in the center.
- Let cool slightly before slicing and serving.
