Creamy Spring Chicken Skillet

Ingredients

  • (3 cloves) Garlic, minced
  • (1 lb.) Zucchini, sliced into 1/4 inch rounds
  • (1 lb.) Asparagus, trimmed and cut into 1 inch pieces
  • (1 cup) Peas
  • (4) Breast - Boneless/Skinless, Chicken
  • (2 tsp, divided) Salt
  • (2 tsp, divided) Freshly Ground Black Pepper
  • (1 pint) Cherry Tomatoes
  • (1 tsp) Dried Oregano
  • (1 cup) Heavy Cream
  • (3/4 cup) Chicken Broth
  • (5 oz) Baby Spinach

Directions

  1. Prepare the ingredients – Mince garlic, slice zucchini and asparagus, and thaw peas under lukewarm water, if using frozen.
  2. Pound the chicken – Flatten each chicken breast to ½-inch thickness. Pat dry and season with 1 tsp salt and ½ tsp black pepper.
  3. Sear the chicken – Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear half of the chicken for 3-5 minutes per side until golden brown. Remove and repeat with the second batch.
  4. Sauté the veggies – Add the remaining olive oil to the skillet. Cook zucchini, asparagus, and cherry tomatoes until the tomatoes blister and the veggies brown slightly (about 3-5 minutes). Stir in garlic, peas, remaining salt, black pepper, oregano, and red pepper flakes. Cook for 1 minute until fragrant.
  5. Make the sauce – Pour in heavy cream and chicken broth, stirring to deglaze the pan. Simmer for 4-8 minutes until slightly thickened.
  6. Add spinach & finish cooking – Stir in spinach and let it wilt. Return the chicken (with any juices) to the skillet, nestling it into the sauce. Simmer for 5 minutes or until the chicken reaches 165ºF.
  7. Serve warm – Spoon sauce and veggies over the chicken and enjoy with fresh farm bread or over rice.
