Farm-Fresh Stuffed Peppers

Stuffed peppers are a classic way to bring together your CSA meat and produce into one beautiful, nourishing dish. They’re simple to make, easy to customize, and look gorgeous coming out of the oven.

Ingredients
- (4) Large Bell Peppers
- (1 lb) Ground Beef
- (1 medium) Onion, diced
- (2 cloves) Garlic, minced
- (1-2 cups) Seasonal Vegetables (zucchini, corn, tomatoes, greens, etc) chopped
- (1 cup) Cooked Rice
- (1 cup) Shredded Cheese (cheddar, mozzarella, etc)
- (2 tbsp) Olive Oil
- (to taste) Salt & Pepper
- (to taste) Fresh Herbs (parsley, basil, cilantro)
Directions
- Preheat oven to 375°F. Slice the tops off the peppers and remove the seeds. Lightly brush with olive oil and place in a baking dish.
- In a skillet, heat the remaining oil and cook the onion until softened. Add garlic, then stir in the ground meat. Cook until browned.
- Mix in the chopped veggies, cooking until just tender. Stir in the cooked rice, half of the cheese, salt, and pepper.
- Spoon the mixture evenly into the peppers. Top with the remaining cheese.
- Cover with foil and bake for 25 minutes. Uncover and bake an additional 10 minutes, until the peppers are tender and the cheese is golden.
- Sprinkle with fresh herbs before serving.
