Tender cubes of pasture-raised beef are marinated in a savory blend of garlic, olive oil, and spices, then grilled alongside fresh seasonal vegetables. Ingredients
- (2 lbs.) Kebab, Beef
- (2) Bell Pepper, any color, cut into chunks
- (1 large) Red Onion, cut into wedges
- (1) Zucchini, sliced thick
- (2-3 tbsp) Olive Oil
- (3 cloves) Garlic, minced
- (2 tbsp) Coconut Aminos
- (1 tbsp) Balsamic Vinegar
- (1 tsp) Dijon Mustard
- (1 tsp) Smoked Paprika
- (to taste) Salt & Pepper
Directions
- In a large bowl, whisk together olive oil, garlic, coconut aminos, balsamic vinegar, Dijon mustard, smoked paprika, salt, and pepper.
- Add the beef cubes to the marinade and toss well. Cover and refrigerate for at least 1 hour (up to overnight for more flavor).
- Thread the marinated beef, peppers, onion, and zucchini onto skewers, alternating for color and variety.
- Preheat grill to medium-high heat. Place skewers on the grill and cook 8–10 minutes, turning occasionally, until beef is cooked to your preferred doneness and veggies are slightly charred.
