A farm-fresh take on a classic dish—this hearty, flavor-packed sausage and pepper skillet brings out the best in our pasture-raised sausage. Slow-simmered with sweet bell peppers, caramelized onions, and a rich tomato-infused sauce, it’s a comforting meal that’s as versatile as it is delicious.
Ingredients
- (1/4 cup) Extra-Virgin Olive Oil
- (1 lb.) Sausage, Mild Italian, Link
- (2, sliced) Bell Peppers
- (2, sliced) Yellow Onions
- (4, chopped) Garlic Cloves
- (To Taste) Salt and Pepper
- (1 tbsp) Italian Seasoning
- (1/4 tsp) Red Pepper Flakes (optional)
- (1/4 cup, chopped) Fresh Basil
- (2 tbsp) Tomato Paste
- (1 cup) Chicken Broth
- (15 oz can) Diced Tomatoes
Directions
- Brown the Sausage – Heat olive oil in a large skillet over medium heat. Brown the sausages on both sides, about 7-10 minutes. Remove and set aside.
- 2. Sauté the Veggies – In the same pan, add the sliced peppers and onions. Sauté until softened and golden, about 5 minutes.
- 3. Build the Flavor – Stir in garlic, Italian seasoning, red pepper flakes (if using), and basil. Cook for another 2 minutes until fragrant.
- 4. Deglaze & Simmer – Pour in Marsala wine or broth, scraping up browned bits from the pan. Stir in diced tomatoes and tomato paste.
- 5. Finish the Dish – Return the sausages to the skillet, season with salt and pepper, and let everything simmer for 15 minutes until the sauce thickens.
How to Serve:
Enjoy over mashed potatoes, pasta, polenta, or cauliflower rice. Or, pile it into a toasted hoagie roll for the ultimate sausage sandwich. However you serve it, this dish is a crowd-pleaser!
