This hearty farm-fresh salad brings together nutrient-dense kale, crispy pasture-raised bacon, hard-boiled eggs, and creamy feta—all tossed in a tangy honey mustard vinaigrette. Simple, satisfying, and packed with flavor, it’s perfect as a side or light meal. Everything you need is available at the farm store!

Ingredients
- (1 bunch) Fresh Kale, stems removed and leaves chopped
- (2-3) Sliced, Hard Boiled Eggs
- (4 slices, cooked and crumbled) Bacon
- (1/3 cup) Feta Cheese, crumbled
- (2 tbsp) Olive Oil
- (1 tbsp) Apple Cider Vinegar
- (1 tsp) Dijon Mustard
- (To Taste) Salt & Pepper
Directions
- Prepare the kale: Place chopped kale in a large bowl. Drizzle with olive oil and a pinch of salt, then massage the leaves with your hands for 1–2 minutes until they soften and darken in color.
- Make the dressing: In a small jar or bowl, whisk together apple cider vinegar, honey or Dijon mustard, and a pinch of salt and pepper. Drizzle over the kale and toss to coat.
- Assemble the salad: Top the dressed kale with sliced eggs, crumbled bacon, and feta.
- Make it your own: Add other vegetables such as red onion, cucumber, tomato, & more!
- Serve: Enjoy immediately or refrigerate for up to a day. Perfect as a side dish or a light lunch!
