Ingredients

  • (4) Leg Quarters, Chicken
  • (2 tbsp) Dijon Mustard
  • (2 tbsp) Pure Maple Syrup
  • (2 tbsp) Olive Oil
  • (2 cloves) Garlic, minced
  • (1 tbsp) Apple Cider Vinegar
  • (1 tsp fresh or 1/2 tsp dried) Thyme
  • (to taste) Salt & Pepper

Directions

  1. Preheat oven to 400°F.
  2. Whisk together Dijon mustard, maple syrup, olive oil, garlic, vinegar, thyme, salt, and pepper.
  3. Pat chicken dry and place in a roasting pan or on a sheet tray lined with parchment.
  4. Brush generously with the maple Dijon mixture, coating all sides.
  5. Roast for 50–60 minutes, basting halfway through, until skin is golden and internal temperature reaches 165°F.
  6. Let rest for 5–10 minutes before serving.
