Ingredients

  • (1 lb) Sausage, Mild Italian, Loose Ground
  • (2 cups) Butternut Squash, cubed
  • (1) Apple, cbed
  • (8 oz) Broth
  • (1 tbsp) Olive Oil
  • (1 small) Red Onion, diced
  • (2 cloves) Garlic, minced
  • (1 tbsp) Tomato Paste
  • (1/2 tsp) Paprika
  • (to taste) Salt & Pepper
  • (for garnish) Fresh Sage

Directions

  1. Heat olive oil in a large skillet. Add the ground sausage and cook until browned, about 8–10 minutes.
  2. Stir in the onion, garlic, tomato paste, paprika, salt, and pepper. Cook until fragrant and the onion begins to soften.
  3. Add butternut squash and broth. The squash should be partially submerged in the liquid. Cover and simmer over medium-low heat for about 12 minutes, or until the squash is tender.
  4. About 3 minutes before the squash is done, stir in the cubed apple. Cover and continue cooking.
  5. Remove from heat, garnish with fresh sage, and serve warm.
