Ingredients
- (1 lb) Sausage, Mild Italian, Loose Ground
- (2 cups) Butternut Squash, cubed
- (1) Apple, cbed
- (8 oz) Broth
- (1 tbsp) Olive Oil
- (1 small) Red Onion, diced
- (2 cloves) Garlic, minced
- (1 tbsp) Tomato Paste
- (1/2 tsp) Paprika
- (to taste) Salt & Pepper
- (for garnish) Fresh Sage
Directions
- Heat olive oil in a large skillet. Add the ground sausage and cook until browned, about 8–10 minutes.
- Stir in the onion, garlic, tomato paste, paprika, salt, and pepper. Cook until fragrant and the onion begins to soften.
- Add butternut squash and broth. The squash should be partially submerged in the liquid. Cover and simmer over medium-low heat for about 12 minutes, or until the squash is tender.
- About 3 minutes before the squash is done, stir in the cubed apple. Cover and continue cooking.
- Remove from heat, garnish with fresh sage, and serve warm.
