Ingredients
- (4-6 links) Spring House Farm Sausage
- (2 cups) Sweet Potatoes, cubed
- (2 cups) Broccoli Florets
- (1 cup) Bell Pepper, color(s) of choice, chopped
- (2 cloves) Garlic, minced
- (2 tbsp) Olive Oil
- (1 tsp) Italian Seasoning
- (To Taste) Salt & Pepper
Directions
- Preheat oven to 400 degrees. Lined baking sheet with aluminum foil.
- Put prepped veggies into a large bowl. Drizzle with olive oil and add seasoning. Toss until fully coated and combined.
- Spread veggies evenly on baking sheet.
- Toss the sausages in the remaining oil in bowl, then nestle them into little pockets with the veggies.
- Bake for 30-40 minutes, until veggies are fork-tender and sausages have reached and internal temperature of 160 degrees.
- Serve with rice, quinoa, salad, or pasta.
