Ingredients

  • (1 lb) Ground Beef
  • (2 tbsp) Olive Oil
  • (1 cup, chopped) Yellow Onion
  • (2 tsp) Parsley
  • (1 tsp) Rosemary
  • (1 tsp) Thyme
  • (to taste) Salt & Pepper
  • (1 tbsp) Worcestershire Sauce
  • (2 cloves, minced) Garlic
  • (2 tbsp) Flour
  • (2 tbsp) Tomato Paste
  • (1 cup) Beef Broth
  • (1 cup) Peas & Carrots
  • (1/2 cup) Corn
  • (2 - peeled and cut into 1 inch cubes) Russet Potatoes
  • (8 tbsp) Butter
  • (1/3 cup) Half & Half
  • (1/2 tsp) Garlic Powder
  • (1/4 cup) Parmesan Cheese

Directions

  • Cook the filling: Heat a little olive oil in a skillet and sauté onions until soft. Add your ground beef (or lamb) along with herbs, salt, and pepper. Brown the meat, then stir in garlic and Worcestershire sauce. Mix in a little flour and tomato paste, then pour in beef broth with frozen peas, carrots, and corn. Let it simmer until thick and flavorful.
  • Make the potatoes: Boil peeled, chopped potatoes until tender. Drain and mash with butter, a splash of half & half, garlic powder, salt, pepper, and a sprinkle of parmesan until creamy.

  • Assemble and bake: Spread the meat mixture in a casserole dish, top with the cheesy mashed potatoes, and smooth it out. Bake until the potatoes are golden and the filling is bubbly. Serve warm and enjoy a cozy, hearty farm-to-table meal.
