Ingredients
- (1) Chuck Roast, Beef
- (4 cloves) Garlic, minced
- (1/2 cup) Balsamic Vinegar
- (1/4 cup) Extra-Virgin Olive Oil
- (1 tbsp) Kosher Salt
- (1 tbsp) Freshly Ground Black Pepper
Directions
1. Marinate the Roast
In a large bowl or baking dish, whisk together garlic, balsamic vinegar, olive oil, kosher salt, and black pepper.
Add the chuck roast and turn to coat well. Cover and refrigerate for at least 12 hours and up to 24 hours, turning halfway through if possible.
2. Preheat the Grill
Prepare a grill for medium-high heat and preheat for about 5 minutes.
3. Grill the Chuck Roast
Place the roast over direct heat and grill, turning every 5 minutes, until the internal temperature reaches:
- 120°F for rare
- 125°F for medium-rare
- 135–140°F for medium
Cook time will usually be around 30–40 minutes depending on thickness and grill temperature.
4. Rest & Slice
Transfer roast to a cutting board and let rest for 10 minutes.
Slice thinly against the grain and finish with flaky sea salt before serving.

- Don’t skip the marinade. The longer the roast sits in the balsamic and oil mixture, the more tender and flavorful it becomes.
- Chuck roast benefits from slicing thinly against the grain for the best texture.
- If flare-ups happen on the grill, move the roast temporarily to indirect heat.
