  • Prep Time:
  • Servings: 4

Ingredients

  • (1 lb.) Ground Lamb
  • (2 cloves) Garlic, minced
  • (1/4 cup) Parsley, fresh & finely chopped
  • (2 tbsp) Mint, fresh & finely chopped
  • (1/2 small) Onion, grated
  • (1 tsp) Ground Cumin
  • (1 tsp) Ground Coriander
  • (1/2 tsp) Smoked Paprika
  • (1/2 tsp) Salt
  • (1/4 tsp) Black Pepper
  • (1/4 tsp) Cinnamon (optional)
  • (1 tbsp) Olive Oil

Directions

For serving (optional):

  • Warm pita bread
  • Tzatziki or garlic yogurt sauce
  • Sliced cucumber and tomatoes
  • Fresh herbs
  • Lemon wedges

Instructions

  1. In a large bowl, combine the ground lamb, garlic, parsley, mint, onion, spices, salt, pepper, and olive oil. Mix until just combined—avoid overmixing to keep the kofta tender.
  2. Shape the mixture into small oval patties or form around skewers if grilling.
  3. Preheat your grill or grill pan to medium-high heat. Cook the kofta for about 4–5 minutes per side, until browned and cooked through.
  4. Serve warm with pita, fresh vegetables, herbs, and a drizzle of tzatziki or yogurt sauce.

Farm Tip:

Pasture-raised lamb has a rich flavor that pairs beautifully with bold seasonings like garlic, herbs, cumin, and coriander. This recipe is a great introduction to lamb if you're trying it for the first time!
